Our Spirits
Five small-batch spirits, each one named for a piece of San Juan Capistrano's story. From the trails that shaped old California to the cliffs where the swallows return each spring, every bottle in our lineup carries the character of the land it comes from. We are currently in development ahead of our first release in November 2026, timed to the 250th anniversary of Mission San Juan Capistrano. PACIFIC TRAIL WHISKEY -
California Whiskey
Warm, road-worn, and built for the long haul. Named for the historic trails that brought settlers and cattle down the California coast, Pacific Trail is aged in charred American oak with notes of toasted grain, sweet oak, and a hint of California sun. Pour it neat. Pour it on a porch. Pour it for someone you've been meaning to call.
SWALLOW'S NEST BOURBON -
Small Batch Bourbon
Named for the cliff swallows that return to San Juan Capistrano every spring without fail. Deep caramel, vanilla, baking spice, and a long, warm finish. Distilled in small batches, bottled with conviction. A bourbon that knows where it comes from.
HIGHLAND RYE -
California Rye Whiskey
Named for the sun-baked highlands above San Juan Capistrano, where the coastal breezes meet the chaparral and the views stretch all the way to the Pacific. Bold, spicy, and unapologetically Californian. Highland Rye carries notes of cracked pepper, dried fruit, toasted oak, and a long clean finish. The spirit of the hills, distilled.
